A region dropdown is a deployment choice. Sovereignty is an architecture.

A great many “EU” offerings are a US platform with a European region toggle. The data may sit in Frankfurt, but the control plane, the support access and the legal reach do not. Under instruments such as the US CLOUD Act, a US-headquartered provider can be compelled to produce data regardless of where it is physically stored. A region setting does not change who can be served a warrant, and it does not change which legal system the operator answers to.

Where your data sits matters. Who can reach it matters more.
